2 racks of pork spare ribs
1 tablespoon olive oil
Salt and black pepper

Preparation Steps
Preheat Oven or Grill:
Oven: Preheat to 275°F.
Grill/Smoker: Set up for indirect heat.
Trim Ribs:
Remove the membrane from the back of the ribs for better flavor. Use a paper towel to grip and pull it off.
Season Ribs:
Rub the ribs with olive oil, salt, pepper, and dry rub. Let them sit for 30 minutes to soak in the seasoning.
Cooking:
Oven: Place ribs on a foil-lined baking sheet, cover with foil, and bake for 2.5 to 3 hours until tender.
Grill: Cook ribs over indirect heat for 3 to 4 hours, basting with BBQ sauce for the last 30 minutes.
Smoke: Smoke ribs at 225°F for 5 to 6 hours, wrapping in foil for the last 2 hours to keep them moist.
Rest and Serve:
Let the ribs rest for 10-15 minutes before slicing between the bones. Serve with extra BBQ sauce on the side.
